Texas Szechuan Pulled Pork Sliders

Dana McCoy’s Locally Sauced up Texas Szechuan Slider
This slider was a lot of fun to make and even more fun to eat. Since pulled pork is not the healthiest part of the pig to eat, I saved this one for the weekend and made a very healthy coleslaw to add to the dish.
Ingredients
- 3-4 lbs. pork shoulder, bone in, fat trimmed
- 1.5 Tb. yellow mustard
- 2 tsp. onion powder
- Salt and pepper to taste
- 1/2 cup Texas Szechuan Sauces from PROPER SAUCES BY ZAY, EAST meets WEST
- 4 ciabatta rolls, warmed or toasted
Mix together
- 2 cups cabbage, shredded
- 1 cup carrots, shredded
- 1/2 cup figs, diced
- 1 lemon, juiced
- 1 heaping Tb. non-fat Greek Yogurt
- Salt and pepper to taste
Preparation
- Rub the pork with the yellow mustard followed by the onion powder, salt and pepper.
- Place it on the grill for 6-7 hours. Keep in mind pork shoulder on the grill is difficult and times may vary. [F&F: Pork shoulder takes a several hours to cook no matter what method you use. If you click here you'll find instructions for braising the shoulder or cooking it in a crockpot. In any event--this is not a particularly quick meal to simply "whip up".]
- Once the pork was completed we let it rest before pulling it apart. At that point I used 1/2 cup of Texas Szechuan Proper Sauces by Zay and mixed it in with the pork.
- While warming/toasting the ciabatta rolls, mix together the carrots, cabbage, figs,, lemon juice, salt and pepper to taste, and the Greek yogurt
- Mixed it all together
To assemble
Place about four ounces of the shredded pork on the ciabatta roll and top with the cole slaw. [Refrigerate or freeze any leftover pork.]
The coleslaw will help cool off your mouth from the spicy Texas Szechuan sauce.
This is a delicious and easy summer meal using locally sourced ingredients.
