Mexican Shrimp Cocktail a.k.a. Shrimp Delight

Mexican Shrimp Cocktail, or Shrimp Delight, is a simple and delicious dish to prepare for the Super Bowl, or any time you have a crowd. Try Claudia Alarcón’s recipe and see what I mean.

Claudia’s Easy Shrimp Cocktail – AKA Shrimp Delight

I add Clamato to thin the sauce and add a deeper seafood flavor. If you prefer it thicker, double ketchup and omit Clamato. You could also use clam juice at a 3:1 ratio with the ketchup. You can add a few drops of bottled sauce such as Tabasco, Cholula, or habanero for an extra kick. This appetizer can be made the night before, removing from fridge a few minutes before serving and adding avocado at the last minute. Serving with Saltines is traditional in Mexico, but unsalted tortilla chips will do if you prefer. The recipe can be doubled for a larger crowd.

1 pound cocktail-size shrimp
1/2 cup ketchup
Juice of 2 large limes
1 teaspoon Maggi sauce
1 tablespoon Worcestershire
1/2 cup Clamato (a tomato and clam juice drink available at the grocery store)
1 small white onion, diced
1 medium tomato, diced
1 small can jalapeños en escabeche (pickled)
1 bunch cilantro, coarsely chopped
1/2 cup pimento stuffed olives, sliced or coarsely chopped
1 large avocado, cut in small cubes

In a large glass bowl, mix ketchup, lime juice, Maggi, Worcestershire, Clamato, and a tablespoon of the escabeche from the jalapeños, and mix well. Add onion, tomato, olives, and chopped jalapeños to taste. Mix well and check seasoning. Add shrimp and toss. Chill until serving. At serving time, check seasoning again and adjust to taste. Add avocado and toss gently. Serve accompanied with saltine crackers and a cold beer on the side.
