Roll-Out Sugar Cookie Recipe

Modified from Lila Loa’s recipe:

1 cup slightly softened butter
1 cup brown sugar (remove any brown sugar lumps before you put it in your dough)
1/2 cup granulated white sugar
2 large eggs
2 teaspoons vanilla or vanilla bean paste (more if you like)
3/4 teaspoon salt
1/8 teaspoon baking powder
4 cups flour


Cream the butter and both sugars together until light and fluffy.
Add the eggs and the vanilla and mix thoroughly.
Add the salt and baking powder and again with the mixing of the dough.
Add flour a cupful at a time.

Bake at 350F until they are just firm and not yet turning brown around the edges.

If you roll to 1/4″ thick, bake for about 7 minutes.
If you roll to 3/8″ thick, bake for about 10 minutes.

When done, remove cookies from the oven and allow them to cool five minutes before transferring them to a wire rack to cool completely. Once cooled, decorate your crispy canvases using royal icing, glaze or both. Of course, if you can’t wait, enjoy one as is. Who’s gonna know?
