Ireland is an island, which means it’s surrounded by water, and in those waters are fishes–including salmon. This delicious recipe from Fadó Irish Pub and Restaurant gives home cooks another way to use the versatile Boxty, which is a savory potato pancake.

This dish looks beautiful and tastes even better. It’s easily expandable, and would be a hit at any cocktail party.

Smoked Salmon Bites
Yield: 1 serving

Ingredients

  • 3  oz Irish Oak Smoked Salmon
  • 4  boxty blinis (2 inch boxty rounds flash fried until golden brown)
  • 2  oz Prepared creamy horseradish dressing
  • 1  oz chopped green onion
  • 1 oz capers
  • 1 oz chopped red onion

Procedure:

  1. Place four boxty blini’s on a plate
  2. Pile with strips of smoked salmon
  3. Top with horseradish cream, chopped red onion, green onion and capers
  4. Serve at room temperature
