Super Bowl Food Fun

It’s been decided: the Patriots and Eagles will face off in Super Bowl 52…or LI as they like to say.

Although her team—the Pittsburgh Steelers—won’t be on the field at U.S. Bank Stadium in downtown Minneapolis, Minnesota next Sunday, February 4th, NFL fan extraordinaire, Claudia Alarcón, kindly shared the recipe for one of her famous Super Bowl party snacks.

Friends who’ve had the dish refer to it as “Shrimp Delight”, probably because the appetizer tastes like a warm, clear day on a white sand Mexican beach.

Claudia simply calls it: “Mexican Shrimp Cocktail.”

No matter what you call it, this simple, savory, slightly sweet and crunchy recipe comes together quickly and can be made the day ahead to allow the flavors to meld.

Because it does come together quickly–and doubles and even triples easily (depending on how many folks you are hosting)–if you do make it the day before, you’ll spend Game Day with friends and family watching the game and halftime show.

It beats being stuck in the kitchen with the dirty dishes while hearing everyone else whooping it up in front of the flat screen.

For Game Day, Claudia says she usually prepares snacks that reference the culinary traditions of each team’s hometown. However, because at the time of our visit, neither of the teams had been decided, she went with a food fan favorite, the Mexican Shrimp Cocktail.

If I know Claudia, on game day she’ll serve the shrimp cocktail, but probably also serve Clam Chowder and Whoopie Pies for the New England Patriots, and Philly Cheesesteak sandwiches and soft pretzels.

Claudia knows that even though her team didn’t make it into this year’s Super Bowl (there’s always next year), the food she serves at her Game Day party will be with the real winner.
