Just about everyone eats fermented foods knowingly or otherwise.

Coffee and yogurt for breakfast. The bread and cheese sandwich at lunch. The glass of wine or beer at the end of a long day. Each underwent a process of controlled decomposition called fermentation to become what they are.

The thing is: it’s easy to ferment food and drink at home. Many Austinites already do, and even more want to learn. You could turn to YouTube for guidance, or you could attend the annual Austin Fermentation Festival October 22 at Barr Mansion.

Nora Chovanec is the marketing and events coordinator for Texas Farmers Market, a sponsor of our show, and the folks who bring you the Cedar Park and Muller Farmers Markets. I met up with Nora at Thai Fresh in South Austin to talk about the festival.

She says this year’s Keynote Speaker is Sandor Katz, a fermentation revivalist, and someone The New York Times calls β€œone of the unlikely rock stars of the American food scene.” In addition to Sandor Katz’ talk, Austin Fermentation Festival attendees have their pick of diverse workshops.

Festival tickets are $20 general admission, or $60 for VIP; and it’s free to attend for kids 12 and under. The festival debuted hands on and interactive workshops last year, which proved so successful, they’re back this year. They are not included in general admission tickets, but available to add on.

Nora told me there are plenty of volunteer opportunities at the festival and that volunteers receive free admission to the event and lots of love.

In addition to a vendors’ area where attendees will find food and drink… they will be a mini farmers market… silent auction…and culture swap. The Austin Fermentation Festival also features a screening of the documentary Fermented, which follows acclaimed Chef Edward Lee.

All proceeds from the Austin Fermentation Festival go to the Farmers Emergency Fund.

  3. I love Texas Keeper’s cider and sure I could learn a lot from those guys. I’d also like to learn more about how miso, kimchi, and sauerkraut are made.

  6. I love me some good ol’ pickled lemon peels! Meyer lemons are wonderful but arguably, regular lemon peels have a stronger tartness that complements any rich, umami flavor on a plate. Yum!

  7. Does beer count as food? If not, I love the simple goodness of congee and fermented tofu.
